Top o’ the mornin’ to ya and happy St. Patrick’s Day!
Here at ROKiT we love a celebration. We want to help you with yours by sharing our favorite corned beef and cabbage recipe made with Edel beer from our sister brand ABK. It’s the perfect recipe to make for your roommates or family while practicing social distancing at home.
Ingredients and prepwork:
1 corned beef brisket (about 4 pounds)
1 bottle ABK Edel
1 medium yellow onion – peel and wedge
5-6 medium Yukon Gold potatoes – peel and quarter
1 head of green cabbage – rinse and wedge
1-2 pounds whole carrots – peel and cut into finger-length pieces
1-2 garlic cloves – mince
1 bay leaf
1⁄4 teaspoon ground cinnamon
1⁄4 teaspoon ground cloves
1⁄4 teaspoon ground allspice
1⁄4 teaspoon ground black pepper
In a large pot, brown all sides of the corned beef over high heat.
Pour ABK Edel over the brisket and add water to fully cover.
Add in the onion, garlic, bay leaf, and spices.
Bring the pot to a boil, then turn down the heat to a simmer.
Cover the pot and let simmer for 3 hours.
After 3 hours, add in the carrots, potatoes and cabbage wedges.
Cover the pot, and let cook an additional 20-30 minutes until the meat and vegetables are tender.
To make Au Jus:
Remove the brisket and vegetables from the pot.
Bring the leftover liquid to a boil and let cook for about 10 minutes.
Serve the brisket and vegetables with a drizzle of Au Jus.
